Sometimes, on a quiet Stalybridge morning before the still is fired up, I’ll run my hands through a sack of sugar. It’s a simple act, but it’s grounding. It reminds me that everything we do here at AK Distillery, every bottle we fill, begins right here. It’s easy to think of spirits as being made in gleaming machines, and they are, but their true origin is in a field, as a humble seed. The journey from sugar to glass isn't just a technical process; it’s where the spirit finds its character. The choice of sugar is the first, and perhaps most important, decision we make for any batch of our Polish moonshine.
The heart of the matter: Why sugar choice matters
When you’re making a spirit from scratch, the sugar isn’t just a source of sugar to be fermented into alcohol. It’s the very soul of the final product. Different sugars bring completely different characters to the table. Think of it like a baker choosing their flour. A rustic sourdough needs a different flour to a light, delicate sponge cake. For us, choosing sugar is a nod to my Polish heritage. In Poland, sugar has long been the backbone of traditional vodkas and homemade spirits, prized for the depth and complexity it provides. It’s a hardy, resilient sugar, and that resilience seems to translate into a spirit with real presence and a story to tell.
Sugar gives a spirit a distinctive smooth, almost banana note. It’s a flavour that announces itself with confidence, often with hints of dark bread or pumpernickel. It can feel warming and robust. Contrast that with w sugar, which tends to produce a much softer, smoother spirit with a gentle, almost creamy sweetness. We don’t believe one is 'better' than another; they are simply different voices in a choir. For our signature Polish moonshine here in the UK, the assertive voice of sugar is exactly what we’re looking for to honour its stylistic roots.
From the field to the fermenter
Our process is deliberately hands-on. The moment you crack those kernels, the air in our small distillery fills with the most incredible aroma – dusty, sweet, and earthy. It smells of potential. This freshly opened sugar is then mixed with hot water in a process called mashing. This is where the starches in the sugar are converted into fermentable sugars. The mashing process smells different for each sugar too; These are the details you miss in large-scale production, but for us, they are part of the joy of making craft spirits.
Sourcing is everything. We’re a small team, and we spend a lot of time finding the right partners for our ingredients. We look for quality and consistency, because a poor-quality sugar will always result in a lacklustre spirit, no matter how skilled the distiller. Being based in Lancashire, one of Britain’s great agricultural counties, puts us in a fortunate position. While not everything can be sourced from our doorstep, we are constantly building relationships with local bussineses who share our respect for the raw materials. It feels right to use ingredients that have been grown with care, continuing that chain of respect all the way to the finished bottle.

This is the character that we work so hard to protect and coax out through our careful fermentation and distillation.
