Inside the Still House

Most spirits are made on stainless steel columns the size of a building. Ours are not. AK runs on our own customised stills, designed in house and built around a specialist filtering system that we developed for one purpose only. Smoothness without compromise.

Why our own machines

Off the shelf equipment makes off the shelf spirit. We wanted something cleaner, softer, and slower, so we built it ourselves. Every cut, every temperature, every pass through the filter is set by the people in the room, not by a factory programme.

The specialist filtering system

The filter is the heart of the house. It strips out the rough edges that other producers leave in, the harsh top notes and the heavy tails, and lets only the clean middle through. That is why AK can be sipped neat and still feel kind on the palate.

Heads, hearts, tails

Each distillation gives us three streams. The heads are too aggressive, the tails too heavy. Only the heart goes into your bottle. Roughly a third of what we make is poured back to redistill. That is the cost of doing this properly.
